A fruits de mer, but different! Texel sausage and salty vegetables are the secret ingredients of this recipe. With this recipe, you can recreate Niels Runderkamp's dish and conjure up a frutti di mare with Texel sausage and herbs from the BBQ.
With the North Sea and Wadden Sea surrounding Texel, we have a rich choice of seafood. Think cockles, shrimps, mussels, oysters and crabs. Visit the fish shops De Oude Vismarkt, Vis van Beek or Vispaleis and Rokerij van der Star to put together your own mix.
Put a dash of olive oil in a pan. Finely dice the island sausage and ham steak and fry on a high heat. Then turn down the heat and fry the chopped onion in the pan. Add the finely chopped garlic and pepper pieces. Let all this fry for a while.
Then add the cherry tomatoes, tomato puree, tin of diced tomatoes, Tesselaar beer, lemon juice, and season the mixture with salt and pepper. Let everything cook on high heat for 2 minutes. Add the Frutti di Mare and cook for another two minutes. Finally, garnish this Texel fish pot with the coriander and lemon slices.
Serve everything together and enjoy!
